The Obsession: Hillrock Estate Solera Aged Bourbon

The Distillery: Located amid the rolling hills and fields of Ancram, in Dutchess County full lace wigs, New York, Hillrock (launched in 2012) is unique for being one of the few true "field-to-glass" operations in the whiskey world. The grains are grown on-site at the Estate itself or by local farmers, floor-malted in Hillrock's own malt house (thought to be the first on-site distillery malt house built since Prohibition), distilled in Hillrock's custom-built copper pot still, then aged in oak barrels and hand-bottled (in gorgeous Venetian glass) on the premises.

The Booze: Hillrock's splendid bourbon is the first whiskey produced via the solera aging process Antique jewelry, a system traditionally used in the Sherry and cognac industries. The concept, introduced and overseen at Hillrock by master distiller David Pickerell, entails periodically removing just a bit of aged bourbon from one of a stack of barrels and replacing it with younger spirits from another barrel--in effect, older bourbon mingles and marries with younger bourbon in every barrel in the stack. The bourbon is then finished in Sherry casks, resulting in a distinctly nuanced and satisfying whiskey, with aromatic notes of caramel and vanilla, and spicy-sweet (clove, cinnamon) layers of flavor Outsourcing payroll. I love this stuff.
