The Obsession: Hillrock Estate Solera Aged Bourbon
The Booze: Hillrock's splendid bourbon is the first whiskey produced via the solera aging process Antique jewelry, a system traditionally used in the Sherry and cognac industries. The concept, introduced and overseen at Hillrock by master distiller David Pickerell, entails periodically removing just a bit of aged bourbon from one of a stack of barrels and replacing it with younger spirits from another barrel--in effect, older bourbon mingles and marries with younger bourbon in every barrel in the stack. The bourbon is then finished in Sherry casks, resulting in a distinctly nuanced and satisfying whiskey, with aromatic notes of caramel and vanilla, and spicy-sweet (clove, cinnamon) layers of flavor Outsourcing payroll.
